Flourless | Gluten-Free | Paleo Option | Grain-Free | Refined Sugar-Free | Naturally Sweetened | Vegetarian
This Crispy Almond Pistachio Florentine Cookie Pizza is a next-level version of my much-loved Crunchy Florentine Cookie Pizza, made even more fragrant, elegant, and irresistible. It is thin, golden, beautifully crisp around the edges, chewy through the centre, and full of that caramelised Florentine texture that makes every bite feel so special. It looks impressive, tastes heavenly, and comes together with simple wholesome ingredients in such an easy way.

The flavour is honestly beautiful. Toasted almonds and pistachios create a rich, nutty crunch, while fresh orange zest brings a bright, fragrant citrus note that lifts the whole cookie. The honey melts into the nuts as it bakes, creating a naturally sweet caramel-style coating, and the cardamom adds that warm, elegant spice in the background. It is subtle, but it makes the whole flavour feel more luxurious and complete.
What makes this version so special is the balance. You get the crisp almond edges, the softer chewy middle, the deep roasted pistachio flavour, the fresh orange aroma, and the smooth dark chocolate topping all in one slice. I use 95% dark chocolate for a rich, less sweet finish that pairs beautifully with the orange zest, pistachio, and cardamom.

This recipe is also wonderfully simple. Instead of shaping individual Florentine cookies, you make one large round cookie pizza and slice it into pretty wedges. It is perfect for sharing, gifting, serving with coffee, adding to a dessert platter, or bringing out after dinner when you want something small, elegant, and memorable.
Even though it looks special, this almond pistachio Florentine cookie pizza is made with simple, wholesome ingredients. It is naturally flourless, gluten-free, grain-free, and naturally sweetened with honey. If you use refined sugar-free dark chocolate, it can also be kept refined sugar-free. For a paleo-friendly option, you can use ghee instead of butter and choose a suitable dark chocolate.

This is the kind of pretty cookie pizza that feels a little unexpected in the best way. It is not a regular cookie, and that is what makes it so lovely to serve. The golden nuts, glossy dark chocolate, orange zest, chopped pistachios, and rose petals make it look beautiful enough for friends, family, parties, afternoon tea, or a special homemade gift. Everyone gets a crisp little wedge, and it feels both simple and special at the same time.
Every slice has that perfect mix of crunch, chew, citrus, spice, nuts, and chocolate. It tastes elegant, addictive, and so satisfying, like a healthier homemade treat with the flavour of something you would find in a beautiful pastry shop.
Ingredients Needed to Make This Almond Pistachio Florentine Cookie Pizza
- Egg White: Egg white helps bind the sliced almonds and pistachios together so the cookie pizza bakes into one thin, crisp Florentine-style wheel.
- Sliced Almonds: Sliced almonds create the delicate, golden, lacy texture. They toast beautifully in the oven and give the cookie pizza its classic Florentine crunch.
- Pistachios: Pistachios add a richer, more luxurious nutty flavour and a beautiful green colour. They make this version feel extra special and pair perfectly with orange zest and dark chocolate.
- Melted Butter: Melted butter adds richness, helps the honey coat the nuts, and supports that crisp caramelised texture. For a dairy-free or paleo-friendly option, you can use melted coconut oil instead. The flavour and texture may be slightly different, but it works beautifully with the orange zest, pistachio, cardamom, and dark chocolate.
- Honey: Honey naturally sweetens the mixture and helps create that sticky caramel-style coating around the almonds and pistachios as it bakes.
- Orange Zest: Fresh orange zest brings brightness, fragrance, and a beautiful citrus flavour that makes this Florentine cookie pizza taste fresh, elegant, and balanced.
- Almond Extract: Almond extract deepens the nutty flavour and gives the cookie pizza that warm bakery-style almond aroma.
- Cardamom: Cardamom adds a gentle warm spice that works beautifully with pistachio, orange zest, honey, and dark chocolate. It makes the flavour feel more refined and complete.
- Salt: A small pinch of salt balances the sweetness and brings out the flavour of the nuts, honey, orange zest, and chocolate.
- Dark Chocolate: Melted dark chocolate creates the glossy centre topping and adds a rich, smooth contrast to the crisp nutty base. I use 95% dark chocolate for a deep, less sweet finish, but you can use your favourite dark chocolate. Use refined sugar-free dark chocolate if you want to keep the recipe refined sugar-free.
- Extra Orange Zest, Chopped Pistachios, and Rose Petals: These finish the cookie pizza beautifully, adding colour, fragrance, texture, and that elegant final look.

Annie, Healthy Food by AnnieIngredients
Florentine Cookie Pizza
- 1 large egg white
- ¾ cup sliced almonds 60 g
- ¼ cup pistachios chopped (30 g)
- 2 tbsp melted butter 30 g
- 3 tbsp honey
- Zest of 1 large orange
- ¼ tsp almond extract
- ⅓ tsp ground cardamom
- Pinch of salt
Topping
- 3 tbsp dark chocolate melted (45 g)
- Extra orange zest
- Extra chopped pistachios
- Dried rose petals optional
- Flaky salt optional
Instructions
- Preheat the OvenPreheat the oven to 160°C (320°F). Line a baking tray with parchment paper. I used a round pizza tray, but you can also use a regular baking tray and shape the mixture into a thin round disc.
- Whisk the Egg WhiteAdd the egg white to a mixing bowl and lightly whisk until loosened and slightly frothy. You do not need to whip it into peaks.
- Add the Honey Butter MixtureAdd the melted butter, honey, orange zest, almond extract, cardamom, and salt. Whisk until smooth and well combined.
- Fold in the Almonds and PistachiosAdd the sliced almonds and chopped pistachios. Gently fold until the nuts are evenly coated in the honey mixture.
- Shape the Florentine Cookie PizzaSpoon the mixture onto the prepared baking tray. Use a spatula to spread it into a thin round disc. Keep the layer even, with the outside edge just slightly thicker and the centre a little thinner so it bakes into a crisp, golden cookie pizza.
- Bake Until Golden and CaramelisedBake for 13 to 15 minutes, or until the top is golden, the edges are crisp, and the almonds and pistachios look beautifully toasted. Ovens can vary, so watch closely during the last few minutes to prevent the edges from over-browning.
- Cool on the TrayRemove from the oven and leave the Florentine cookie pizza on the tray to cool completely. It will be delicate while warm, then firm up and become crispier as it cools.
- Add the Dark ChocolateOnce cooled, spread or drizzle the melted dark chocolate over the centre in a round shape.
- Decorate the TopSprinkle over extra orange zest, chopped pistachios and rose petals.
- Chill Until SetTransfer to the refrigerator until the chocolate is firm. This also helps give the cookie pizza the best crisp-chewy texture.
- Slice and EnjoySlice into wedges like a dessert pizza and enjoy straight from the fridge, or let it sit for 2 to 3 minutes before serving if you prefer the chocolate slightly softer.
Notes
- For a dairy-free or paleo-friendly option, use melted coconut oil or ghee instead of butter. The flavour and texture may be slightly different, but it works beautifully with the orange zest, pistachio, cardamom, and dark chocolate.
- For a refined sugar-free option, use refined sugar-free dark chocolate for the topping.
- I used 95% dark chocolate for a rich, deep, less sweet chocolate finish. You can use your favourite dark chocolate depending on how strong or sweet you like it.
- Watch the cookie pizza closely during the last few minutes of baking, as the thin edges can brown quickly. It should look golden, caramelised, and lightly toasted.
- Let the cookie pizza cool completely before adding the chocolate. It will be delicate while warm, then firm up as it cools.
- For the best texture, store it in an airtight container in the refrigerator. The fridge helps keep the chocolate firm and the Florentine base crisp and chewy.
