This crispy almond pistachio Florentine cookie pizza is thin, golden, chewy in the centre, and beautifully crisp around the edges. Made with sliced almonds, pistachios, honey, orange zest, cardamom, and dark chocolate, it has a caramelised Florentine texture with a fragrant citrus and spice flavour. A pretty flourless cookie pizza that slices into elegant wedges, perfect for sharing, gifting, or serving with coffee.

Ingredients
  

Florentine Cookie Pizza 

  • 1 large egg white
  • ¾ cup sliced almonds 60 g
  • ¼ cup pistachios chopped (30 g)
  • 2 tbsp melted butter 30 g
  • 3 tbsp honey
  • Zest of 1 large orange
  • ¼ tsp almond extract
  • tsp ground cardamom
  • Pinch of salt

Topping

  • 3 tbsp dark chocolate melted (45 g)
  • Extra orange zest
  • Extra chopped pistachios
  • Dried rose petals optional
  • Flaky salt optional

Instructions
 

  • Preheat the Oven
    Preheat the oven to 160°C (320°F). Line a baking tray with parchment paper. I used a round pizza tray, but you can also use a regular baking tray and shape the mixture into a thin round disc.
  • Whisk the Egg White
    Add the egg white to a mixing bowl and lightly whisk until loosened and slightly frothy. You do not need to whip it into peaks.
  • Add the Honey Butter Mixture
    Add the melted butter, honey, orange zest, almond extract, cardamom, and salt. Whisk until smooth and well combined.
  • Fold in the Almonds and Pistachios
    Add the sliced almonds and chopped pistachios. Gently fold until the nuts are evenly coated in the honey mixture.
  • Shape the Florentine Cookie Pizza
    Spoon the mixture onto the prepared baking tray. Use a spatula to spread it into a thin round disc. Keep the layer even, with the outside edge just slightly thicker and the centre a little thinner so it bakes into a crisp, golden cookie pizza.
  • Bake Until Golden and Caramelised
    Bake for 13 to 15 minutes, or until the top is golden, the edges are crisp, and the almonds and pistachios look beautifully toasted. Ovens can vary, so watch closely during the last few minutes to prevent the edges from over-browning.
  • Cool on the Tray
    Remove from the oven and leave the Florentine cookie pizza on the tray to cool completely. It will be delicate while warm, then firm up and become crispier as it cools.
  • Add the Dark Chocolate
    Once cooled, spread or drizzle the melted dark chocolate over the centre in a round shape.
  • Decorate the Top
    Sprinkle over extra orange zest, chopped pistachios and rose petals.
  • Chill Until Set
    Transfer to the refrigerator until the chocolate is firm. This also helps give the cookie pizza the best crisp-chewy texture.
  • Slice and Enjoy
    Slice into wedges like a dessert pizza and enjoy straight from the fridge, or let it sit for 2 to 3 minutes before serving if you prefer the chocolate slightly softer.

Notes

  1. For a dairy-free or paleo-friendly option, use melted coconut oil or ghee instead of butter. The flavour and texture may be slightly different, but it works beautifully with the orange zest, pistachio, cardamom, and dark chocolate.
  2. For a refined sugar-free option, use refined sugar-free dark chocolate for the topping.
  3. I used 95% dark chocolate for a rich, deep, less sweet chocolate finish. You can use your favourite dark chocolate depending on how strong or sweet you like it.
  4. Watch the cookie pizza closely during the last few minutes of baking, as the thin edges can brown quickly. It should look golden, caramelised, and lightly toasted.
  5. Let the cookie pizza cool completely before adding the chocolate. It will be delicate while warm, then firm up as it cools.
  6. For the best texture, store it in an airtight container in the refrigerator. The fridge helps keep the chocolate firm and the Florentine base crisp and chewy.
