It has a deep real pistachio flavour, a soft drizzleable texture, and no added sugar, hidden oils, or preservatives. Ingredients
  

  • 3 cups (360 g) raw unsalted pistachios shells removed before measuring if needed
  • Pinch of salt optional

Instructions
 

  • Preheat the oven
    Preheat your oven to 175°C (350°F). Line a baking tray with baking paper.
  • Prepare the pistachios
    If your pistachios are still in their hard shells, remove the shells first. Measure 3 cups of raw unsalted pistachios after shelling.
  • Roast the pistachios
    Spread the pistachios in an even layer on the baking tray. Roast for 5 to 7 minutes, just until lightly toasted and fragrant. Do not over-roast, as this can darken the colour and change the flavour.
  • Rub and remove some of the skins
    Let the pistachios cool for a few minutes, then transfer them to a clean kitchen towel. Rub them gently but firmly inside the towel to loosen some of the skins. You can then place the pistachios in a sieve or colander and shake them lightly to help separate and remove the loose skins. This helps create a brighter green pistachio butter. A rough rub is enough, so do not worry if some skins stay on.
  • Start blending
    Transfer the warm pistachios to a food processor. Blend until they turn into fine crumbs, then a thick paste. Stop and scrape down the sides of the bowl as needed.
  • Keep blending until smooth
    Continue blending until the pistachios release their natural oils and turn into a smooth, creamy butter. The texture will move from crumbly, to thick, to a ball, then finally to soft, glossy, and drizzleable.
  • Adjust the texture
    For a thicker pistachio butter, stop blending once it looks smooth but still slightly firm. For a softer, runnier texture, keep blending a little longer until it becomes lighter, silkier, and more pourable.
  • Add salt
    Add a small pinch of salt, and blend again for a few seconds to combine.
  • Store
    Transfer the pistachio butter to a clean jar or airtight container. Let it cool completely before sealing and storing.

Notes

  1. Use raw unsalted pistachios for the best flavour and colour. If using pistachios with shells, remove the hard shells first before measuring.
  2. Do not use salted roasted pistachios, as they can make the pistachio butter too salty, darker in colour, and stronger in flavour. You will lightly roast the raw pistachios yourself for the freshest result.
  3. Lightly roasting the pistachios before blending helps bring out their natural nutty flavour and makes them easier to blend.
  4. Rubbing off some of the skins helps create a brighter green colour, but it does not need to be perfect.
  5. Do not stop blending too early. Pistachios need time to release their natural oils and become smooth, glossy, and creamy.
  6. If the food processor feels warm, stop for a minute, scrape down the sides, then continue blending.
  7. For a sweeter version, you can add a little honey, maple syrup, or vanilla, but the classic recipe is made with pure pistachios only.
