Florentine Cookie Base
- 1 ½ cups coconut flakes 50 g
- ¾ cup sliced almonds 70 g
- 4 tbsp honey 85 g
- 3 tbsp melted butter or ghee for paleo 42 g
- ⅓ tsp almond extract
Topping
- 4 tbsp sugar-free dark chocolate melted (60 g)
- 1 tbsp pomegranate arils seeds

- 1 tsp sugar-free white chocolate melted, optional
Preheat the ovenPreheat the oven to 160°C (320°F). Line a baking tray with parchment paper. I used a round pizza tray, but you can also use a regular baking tray and shape the mixture into a thin round disc. Whisk the egg whiteIn a mixing bowl, lightly whisk the egg white. Add the sweet coatingAdd the honey, melted butter or ghee, almond extract, pinch of salt, and vanilla extract if using. Whisk until everything is fully mixed. Fold in the almonds and coconutAdd the sliced almonds and coconut flakes. Gently fold until all the almonds and coconut are evenly coated in the mixture. Shape the Florentine cookie pizzaPour the mixture onto the prepared baking tray. Use a spatula to spread it into a very thin round disc. For the pizza shape, keep the outside edge slightly thicker and spread the middle a little thinner. Bake until golden and crispBake for 10 minutes, then rotate the tray and bake for another 5 minutes, or until the top is deeply golden and the coconut and almonds are beautifully toasted. Watch closely because coconut toasts faster than almonds and can brown quickly. Cool in the panLeave the Florentine cookie pizza in the pan to cool for 10 to 15 minutes. It will firm up more as it cools. Decorate with chocolateOnce cooled, drizzle the melted dark chocolate in the middle in a round shape. Sprinkle over the pomegranate arils (seeds), add a little flaky salt, and drizzle with melted sugar-free white chocolate if using. Chill until setTransfer to the refrigerator until the chocolate is set. Slice and enjoySlice into wedges like a dessert pizza and enjoy.
