Simply add everything to a blender, blend until creamy, decorate, and enjoy a nourishing make-ahead dessert that feels special with minimal effort.

Pudding
- 1/3 cup + 1 tablespoon roasted pistachios 60 g
- 1 tablespoon matcha powder 6 g
- 1 cup cottage cheese 250 g
- 5 large dates 100 g
- 3 tablespoons rosewater 45 ml
- Pinch of salt
Topping
- 3 1/2 tablespoons sugar-free white chocolate
- 1 tablespoon natural pistachio butter homemade
Optional Decoration
- Chopped pistachios
- Dried rose petals optional
Blend the puddingAdd the roasted pistachios, matcha powder, cottage cheese, dates, rosewater, and a pinch of salt to a blender or food processor.Blend until smooth, soft, and creamy. Transfer to glassesTransfer the pudding into serving glasses and smooth the top. Melt the white chocolateMelt the sugar-free white chocolate gently, stirring until smooth. Make the pistachio white chocolate mixtureMix 1/2 tablespoon of the melted white chocolate with the natural pistachio butter until smooth and creamy. Add the toppingDrizzle the remaining plain melted white chocolate over each glass.Then drizzle the pistachio–white chocolate mixture on top. HOW TO ROAST PISTACHIOS
- Preheat oven to 160°C fan / 170°C
- Spread pistachios on a tray in a single layer.
- Roast for 5–7 minutes, until lightly fragrant.
- Cool completely before using.
