High-Protein Chocolate Greek Yogurt Pudding

Thick, creamy and deeply chocolatey, this high-protein Greek yogurt pudding combines Greek yogurt, natural peanut butter, cocoa, 90% dark chocolate, honey and collagen peptides, finished with a glossy chocolate peanut butter swirl.

Ingredients
  

Chocolate Greek Yogurt Pudding

  • 1 cup full-fat Greek yogurt 250 g
  • ¼ cup natural peanut butter 60 g, see Note 2
  • ¼ cup honey 60 g
  • ¼ cup unsweetened cocoa powder 30 g
  • ¼ cup 90% dark chocolate 25 g
  • 2 scoops unflavored collagen peptides

Chocolate Peanut Butter Topping

  • 1 tbsp 90% dark chocolate 10 g
  • 1 tbsp honey 15 g
  • 1 tbsp natural peanut butter 15 g

Instructions
 

  • Melt the Chocolate
    Melt all 35 g of dark chocolate in a small microwave-safe bowl in short bursts, stirring between each, or gently melt it over a double boiler. Set aside 10 g for the topping and let the remaining chocolate cool slightly before adding it to the pudding.
  • Make the Chocolate Pudding
    Add the Greek yogurt to a medium bowl and whisk until smooth and creamy. Add the peanut butter, honey, cocoa powder, 25 g of the melted dark chocolate and collagen peptides. Whisk until completely combined, thick, silky and smooth.
  • Divide & Chill
    Divide the pudding evenly between two dessert glasses. Smooth the tops and refrigerate for at least 1 hour to chill and thicken.
  • Make the Chocolate Peanut Butter Swirl
    Stir the honey into the reserved 10 g melted dark chocolate until smooth and glossy. Divide evenly between the two chilled puddings and spread over the tops. Drizzle thin lines of peanut butter over the chocolate. Using a toothpick or skewer, gently drag through the chocolate and peanut butter in alternating directions to create a feathered swirl.
  • Chill & Serve
    Refrigerate until the topping is set to your preferred consistency. Serve after a short chill for a softer, glossy topping, or chill longer for a firmer chocolate layer over the thick, creamy pudding.

Recipe Notes

1. Greek Yogurt: Use thick, full-fat plain Greek yogurt for the richest, creamiest texture. Different brands vary in thickness, so the final consistency may vary slightly.
2. Peanut Butter: I use my homemade 100% peanut butter for a naturally creamy texture and rich peanut flavor. You can also use a smooth natural peanut butter made with 100% peanuts. See my Easy Homemade Roasted Peanut Butter recipe.
3. Dark Chocolate: I use 90% dark chocolate for a deep, rich chocolate flavor with less sugar than sweeter varieties. Check the ingredients if you need the recipe to remain refined sugar-free.
4. Collagen Peptides: Two scoops of unflavored collagen peptides add extra protein without overpowering the chocolate flavor. You can make the pudding without collagen if preferred, but the overall protein content will be lower.
5. Honey: Honey adds sweetness and balances the tanginess of the Greek yogurt and bitterness of the cocoa and dark chocolate. Honey is an added sugar, although it is not refined white sugar.
6. Chocolate Topping: For a softer, glossy topping, serve after a short chill. For a firmer chocolate layer, refrigerate until set.
7. Make Ahead: Prepare the puddings ahead and keep them covered in the refrigerator until ready to serve.
