Ingredients

  • 3¾ cups frozen raspberries 450 g
  • ½ cup honey 170 g
  • 3 tbsp Truvia caster sweetener or granulated sweetener of choice
  • 2 tsp fresh lemon juice
  • 1½ tsp finely grated lemon zest
  • 1 tsp basil seeds or chia seeds
  • 1 tsp unflavored gelatin powder
  • 2 to 3 tbsp cold water for blooming the gelatin

Instructions

  • Bloom the Gelatin
Add 2 tablespoons cold water to a small bowl. Sprinkle the gelatin evenly over the water and let it sit for about 5 minutes to bloom. Add the remaining tablespoon of water only if needed to fully hydrate the gelatin.
  • Cook the Raspberries
Add the frozen raspberries, honey, Truvia sweetener, lemon juice and lemon zest to a saucepan. Cook over medium heat, stirring occasionally, until the raspberries soften and begin to release their juices.
  • Mash and Reduce
Once the raspberries are soft, gently mash them with a fork, leaving some small pieces of fruit for texture. Reduce the heat to medium-low, bring the mixture to a gentle simmer, and cook for about 15 minutes, stirring regularly, until it has reduced and noticeably thickened.
  • Check the Consistency
Dip a clean, cold spoon into the raspberry mixture, then lift it out and let the jam cool on the spoon for a few seconds. Run your finger through the jam coating the back of the spoon. If it leaves a clear path without immediately running back together, the mixture has reduced enough.
  • Add the Seeds and Gelatin
Reduce the heat to low and stir in the basil seeds or chia seeds. Cook gently for 1 to 2 minutes, stirring frequently.
Remove the saucepan from the heat. Add the bloomed gelatin and stir thoroughly until completely dissolved. Do not boil the jam after adding the gelatin.
  • Cool and Set
Let the jam cool slightly, then transfer it to a clean glass jar. Allow it to cool before covering and refrigerating. The jam will continue to thicken as it chills and the gelatin sets.

Nutrition Facts Notes

✔️ Made with Real Raspberries: The recipe starts with 450 g of raspberries, providing natural berry flavor, vibrant color, fiber and beneficial plant compounds.
✔️ Rich in Antioxidant Plant Compounds: Raspberries naturally contain anthocyanins, ellagitannins and other polyphenols with antioxidant activity.
✔️ Contains Vitamin C: Raspberries naturally provide vitamin C, which supports normal immune function and collagen formation and helps protect cells from oxidative stress. Some vitamin C is reduced during cooking.
✔️ Contains Fiber: Raspberries are naturally rich in fiber, while basil or chia seeds provide a little additional fiber. Because the whole raspberry pulp and seeds remain in the jam rather than being strained out, more of the fruit's natural fiber is retained.
✔️ Refined Sugar-Free: This homemade raspberry jam contains no conventional refined white sugar. It is sweetened with honey and Truvia instead. Honey is still an added sugar, so this recipe is refined sugar-free, but it is not sugar-free or no-added-sugar.
✔️ Basil or Chia Seeds: A small amount helps thicken the jam naturally while contributing fiber. Chia seeds also provide plant-based omega-3 ALA, although the amount per tablespoon of finished jam is small.
✔️ Naturally Gluten-Free: The main ingredients are naturally gluten-free. If you need to follow a strict gluten-free diet, check the labels of the packaged sweetener and gelatin for possible cross-contact.
✔️ Dairy-Free: Made without milk, butter, cream or other dairy ingredients.
