- 1 cup Walnuts
- 1 cup Almond Flour or Meal
- ¼ cup Cocoa Powder
- 6-7 Medjool Dates
- 2 teaspoon Cinnamon
- 4 tablespoon Liquid Coconut Oil (MCT)
- 3 tablespoon Date Juice
Start by removing the seeds from the dates and place them in a small bowl. Add 5–6 tablespoons of boiling water, just enough to cover the dates. Slightly press the dates with the back of a spoon to ensure they are fully submerged. Cover the bowl and let the dates soak for about 5 minutes. After soaking, remove the dates from the liquid and place them in a food processor. Reserve the date juice for later
Add the walnuts into a high-speed food processor and blend until finely ground, about 20 seconds.
Add the almond flour, cocoa powder, cinnamon, coconut oil, soaked dates, and the reserved date juice to the processor. Blend for about 2 minutes or until the mixture becomes sticky and holds together when pressed between your fingers.
Roll the mixture into bite-sized balls using a small scoop or your hands. You should get about 32–33 truffle balls.
Optional: For an extra chocolate layer, dip the truffles in melted chocolate. Place them in the fridge until the chocolate sets for a crunchy coating over the rich, gooey centre.
Store the truffles in an airtight container. They will keep at room temperature for up to 1 week if stored in a cool, dry place away from direct sunlight. For longer freshness, place them in the fridge where they will last for up to 2–3 weeks. You can also freeze them for up to 3 months—just let them sit at room temperature for 15–30 minutes before enjoying.
