Rich, fudgy, and deeply chocolatey, these healthy no-bake date brownies are made with simple wholesome ingredients and topped with a smooth chocolate tahini ganache. They are naturally gluten-free, grain-free, dairy-free, egg-free, and paleo, with an easy vegan-friendly option by using maple syrup instead of honey.

Ingredients
  

Brownie Base

  • 2 cups walnuts 200 g
  • 12 Medjool dates
  • 2/3 cup cocoa powder 56 g
  • 1/2 cup coconut flour 56 g
  • 2 tbsp honey or maple syrup 42 g
  • 1 tsp vanilla extract optional
  • 1 tbsp MCT coconut oil
  • Pinch of salt

Chocolate Ganache Topping

  • 100 g dark chocolate I use %90
  • 3 tbsp tahini 45 g
  • 1 tbsp honey
  • Rose petals Optional

Instructions
 

  • Soak the dates
    Add the dates to a cup and pour 2 tablespoons of boiling water over them. Cover and let them soak for 2 minutes.
  • Make the brownie mixture
    Add the soaked dates and all of the brownie ingredients to a food processor. Process until the mixture is well combined and sticky.
  • Press into the pan
    Line a loaf pan or glass pan with parchment paper. Transfer the brownie mixture to the pan and press it down firmly into an even layer.
  • Make the chocolate topping
    In a heatproof bowl set over a little simmering water, melt the dark chocolate, tahini, and honey together, stirring until smooth.
  • Top the brownies
    Drizzle the chocolate topping over the brownie layer and spread gently if needed. Add your favourite toppings. Rose petals or extra walnuts work beautifully.
  • Chill
    Place the pan in the fridge for at least 1 hour, or until the chocolate topping is set and the brownies are firm enough to slice.
  • Slice and serve
    Lift the brownies out using the parchment paper, slice into 12 pieces, and enjoy.

Store the brownies in an airtight container in the fridge for up to 1 week.
