These Healthy Almond Butter Blondies are gooey, chewy, and rich with a slightly crispy edge. Made with wholesome ingredients like almond flour, avocado oil, and coconut sugar, they’re the perfect guilt-free treat that satisfies your sweet cravings in just 30 minutes.

Ingredients
  

  • 2 Large Eggs
  • ½ cup Almond Butter, I use homemade (runny, unsalted, unsweetened)
  • 3 tablespoon Avocado Oil (or Olive Oil)
  • 3 tablespoon Unsweetened Almond Milk (or your choice)
  • ½ tablespoon Ground Vanilla Bean Powder (or 1 Tsp Vanilla Extract)
  • ½ cup Almond Flour (50g)
  • cup Coconut Sugar (or for keto, use Brown Sweetener)
  • ½ teaspoon Baking Soda
  • ¼ tablespoon Salt
  • ½ cup Mix of Chocolate & Dark Chocolate Chips (Sugar-Free) 

Instructions
 

  • Preheat the Oven: 
    Preheat your oven to 160°C fan (320°F) or 180°C (350°F) conventional. Line a 20 cm x 20 cm (8" x 8") baking pan with parchment paper and set it aside.
  • Whisk the Eggs: 
    In a large bowl, whisk the eggs until they are well combined and slightly frothy.
  • Mix Wet Ingredients: 
    Add the almond butter, avocado oil, almond milk, and vanilla to the bowl. Whisk until the mixture is smooth and fully incorporated.
  • Combine Dry Ingredients: 
    Gently fold in the almond flour, coconut sugar (or your keto sweetener), baking soda, and salt using a spatula. Mix until just combined, being careful not to overmix.
  • Fold in Chocolate Chips: 
    Add the mix of chocolate and dark chocolate chips to the batter, folding them in evenly.
  • Transfer to Baking Pan: 
    Pour the batter into the prepared baking pan, spreading it out evenly to ensure it bakes uniformly.
  • Bake: 
    Place the baking pan in the preheated oven and bake for 20-25 minutes, until the centre is slightly under-baked and the edges are slightly crispy. For a gooey texture, bake for about 18-20 minutes.
  • Cool: 
    Allow the blondies to cool in the pan at room temperature. This helps them set and makes cutting easier.
  • Cut and Serve: 
    Once cooled, cut the blondies into 12 medium squares or 9 large ones, depending on your preference. Enjoy your delicious, healthy treat!
