Ingredients
  

  • 4 large eggs
  • 1 teaspoon baking powder
  • teaspoon baking soda
  • 2 tablespoon garlic olive oil (or regular olive oil)
  •  A handful of fresh spinach
  • A handful of rocket (arugula) 
  • 6-8 cherry tomatoes, halved
  • 30 g full fat feta cheese, crumbled
  • Salt

Spices for Extra Zing:

  • teaspoon smoked paprika
  • ¼ teaspoon tsp thyme
  • ¼ teaspoon garlic granules
  • ½ teaspoon crushed red chili flakes 

Instructions
 

  • Get Ready
    Prepare all your ingredients before starting. Rinse and pat dry the spinach, rocket, and cherry tomatoes. Measure out your spices and set them aside.
  • Beat the Eggs
    In a bowl, crack the eggs and add the baking powder, baking soda, and a pinch of salt and pepper. Whisk the mixture well until it becomes frothy and smooth.
  • Heat the Oil
    Heat the garlic olive oil in a pan over medium heat until hot and fragrant.
  • Cook the Omelette
    Pour the egg mixture into the hot pan and cover it with a lid. Let it cook for about 3–5 minutes, or until the bottom is golden and the top is bubbly.
  • Spice It Up
    Remove the lid and evenly sprinkle the smoked paprika, thyme, garlic granules, and crushed red chili flakes over the omelette. Adjust the amount of spices according to your taste preference.
  • Add the Filling
    On one half of the omelette, add the spinach, rocket, cherry tomatoes, and crumbled feta cheese. Press them lightly into the omelette to help them stick.
  • Fold and Serve
    Using a spatula, carefully fold the other half of the omelette over the filling. Slide the omelette onto a plate and enjoy your puffy, fluffy, and golden crispy omelette with spinach, rocket, and feta filling!
