Ingredients
  

  • 5 large eggs
  • 1/4 cup full cream 60 ml
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/3 teaspoon baking soda
  • 1 teaspoon vinegar
  • 1 tablespoon butter
  • 1 tablespoon coconut oil
  • 2 tablespoon brown monkfruit sweetener
  • 1 cup frozen blueberries 150 g
  • 1 teaspoon lemon juice

To Serve 

  • Sugar-free syrup,  syrup or honey

Instructions
 

  • Prepare the Egg Mixture
    In a bowl, use an electric whisk to whisk together the eggs, cream, vanilla extract, baking powder, baking soda, and vinegar until well combined and increased in volume.
  • Cook the Blueberry Base
    In a medium skillet over medium heat, melt the butter and coconut oil together.
    Add the brown monkfruit sweetener and stir until dissolved.
    Add the blueberries and lemon juice, then cook for about 1 minute, stirring occasionally.
  • Cook the Omelet
    Pour the egg mixture over the blueberry mixture and spread it evenly.
    Cover the skillet with a lid and cook for about 5 minutes, or until the omelet is puffy and set.
    Carefully flip the omelet and cook for another 30 seconds to 1 minute.
  • Serve
    Serve warm with sugar-free syrup, syrup, or honey if desired.
