This is my go-to recipe for making delicious and healthy granola clusters at home. I love how easy it is to make and how crunchy and satisfying each bite is. It’s packed with protein, fibre, and natural sweetness from nuts, seeds, fruits, honey, and coconut oil. It’s also customisable, so you can use your favourite ingredients or whatever you have on hand. Enjoy it with yoghurt, milk, smoothies, or as a snack on its own. It’s perfect for breakfast, a snack, or a treat!

Ingredients
  

  • 2 cups rolled oats
  • 1 cup chopped walnuts
  • 1 cup chopped almonds
  • 2 cups mix of pumpkin seeds, chopped dates, and chopped dried apricots or any other fruits
  • 1/3 cup honey
  • 1 tablespoon of ground cinnamon
  • 1 teaspoon of ground ginger
  • 1/3 cup coconut MCT oil or coconut oil liquid or melted
  • 1/2 teaspoon of salt
  • 1 large egg white

Instructions
 

  • Preheat the oven:
    Preheat your oven to 160°C (320°F) and line a baking sheet with parchment paper. This will help the granola bake evenly and prevent sticking.
  • Mix the dry ingredients
    In a large bowl, toss the rolled oats with cinnamon, ginger, salt, nuts, seeds, and fruits. Use a spatula or your hands to mix everything well and distribute the spices.
  • Add the wet ingredients: 
    Drizzle the honey and coconut oil over the mixture and stir well to combine. These ingredients act as natural sweeteners and binders for the granola.

  • Whisk the egg white: 
    In a small bowl, whisk the egg white until frothy, then pour it over the oat mixture and stir well to coat everything evenly. The egg white is the secret ingredient that helps form big, chunky clusters and adds extra protein.
  • Press the granola mixture:
    Spread the granola on the prepared baking sheet, pressing it into a 15mm (0.6 inch) thick rectangle. Use your hands or a spatula to pack the granola tightly and evenly. This helps the granola stick together and creates large clusters.

  • Bake the granola:
    Bake for 30 to 35 minutes, rotating the pan halfway through, until the granola is lightly browned along the edges, golden on top, and firm to the touch.
  • Cool completely before breaking:
    Let the granola cool completely on the pan before breaking it into clusters of your desired size. You can use your hands or a knife to create large or small pieces. The granola will crisp up as it cools, so be patient and don’t touch it while it’s hot.
