Ingredients
  

  • 3 Purple curly kale leaves (stalks removed)
  • 30 g rocket (arugula), approximately 2 cups
  • 1 large peach
  • 4 slices smoked salmon (or more)
  • 2 tablespoon crushed pistachios
  • 30 g shaved smoked Cheddar cheese, approximately ¼ cup
  • 1 teaspoon coconut oil (for frying peaches)

For the Honey Dijon Balsamic Vinaigrette Dressing:

  • ¼ cup balsamic vinegar, approximately 80 ml
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • 2 tablespoon extra-virgin olive oil
  • 1 tablespoon water
  • teaspoon thyme
  • teaspoon rosemary
  • Salt and pepper to taste

Instructions
 

  • Prepare the Kale:
    Remove the stalks from the kale. Add ⅓ teaspoon olive oil to the kale and massage until the leaves start to soften and wilt.
  • Caramelize the Peaches:
    Heat a teaspoon of coconut oil in a pan over medium heat. Slice the peach and add it to the pan. Fry for 3-4 minutes until golden. Turnover and cook for another 3 minutes or until golden.
  • Shave the Cheese:
    Use a peeler to shave the smoked Cheddar cheese into thin slices.
  • Assemble the Salad:
    On a plate, arrange the massaged kale and rocket. Top with caramelized peaches and slices of smoked salmon. Sprinkle crushed pistachios and add the shaved smoked Cheddar cheese.
  • Prepare the Dressing:
    In a bowl, combine balsamic vinegar, honey, Dijon mustard, extra-virgin olive oil, water, thyme, rosemary, smoked paprika, salt, and pepper. Whisk well until all ingredients are well combined. (Dressing is adjusted for this salad to balance the Flavors.)
  • Dress the Salad:
    Drizzle the Honey Dijon Balsamic Vinaigrette over the salad. Toss gently to combine.
