  • 400 g (about 1 3/4 cups) cottage cheese
  • 3 large eggs
  • 270 g (3 cups) rolled oats
  • 2 tbsp ground flaxseed
  • 55 g (1/3 cup) raisins
  • 55 g (1/3 cup) pumpkin seeds
  • 55 g (1/3 cup) sunflower seeds
  • 55 g (1/3 cup) chia seeds
  • 8 cm sprig of rosemary, finely chopped
  • 1 tsp cinnamon
  • 1 tsp baking powder

Instructions
 

  • Prepare the Oven and Baking Tray
    Preheat your oven to 340 degrees Fahrenheit or 170 degrees Celsius. Line a baking tray with parchment paper and set aside.
  • Crush a Portion of the Oats
    Add 1 cup (90g) of rolled oats to a food processor and pulse for about 5 seconds until the texture becomes coarse, like rough oat flour. This helps improve the structure of the bread.
  • Mix the Wet Ingredients
    In a large mixing bowl, whisk together the cottage cheese and eggs until smooth and well blended
