A thick, glossy homemade raspberry jam made with frozen raspberries, honey, lemon and basil or chia seeds. Naturally sweet-tart, fruity and refined sugar-free, with a beautiful spoonable texture that is perfect for toast, breakfast bowls, cookies and desserts.

Ingredients
  

  • 3¾ cups frozen raspberries 450 g
  • ½ cup honey 170 g
  • 3 tbsp Truvia caster sweetener or granulated sweetener of choice
  • 2 tsp fresh lemon juice
  • 1½ tsp finely grated lemon zest
  • 1 tsp basil seeds or chia seeds
  • 1 tsp unflavored gelatin powder
  • 2 to 3 tbsp cold water for blooming the gelatin

Instructions
 

  • Bloom the Gelatin
    Add 2 tablespoons cold water to a small bowl. Sprinkle the gelatin evenly over the water and let it sit for about 5 minutes to bloom. Add the remaining tablespoon of water only if needed to fully hydrate the gelatin.
  • Cook the Raspberries
    Add the frozen raspberries, honey, Truvia sweetener, lemon juice and lemon zest to a saucepan. Cook over medium heat, stirring occasionally, until the raspberries soften and begin to release their juices.
  • Mash and Reduce
    Once the raspberries are soft, gently mash them with a fork, leaving some small pieces of fruit for texture. Reduce the heat to medium-low, bring the mixture to a gentle simmer, and cook for about 15 minutes, stirring regularly, until it has reduced and noticeably thickened.
  • Check the Consistency
    Dip a clean, cold spoon into the raspberry mixture, then lift it out and let the jam cool on the spoon for a few seconds. Run your finger through the jam coating the back of the spoon. If it leaves a clear path without immediately running back together, the mixture has reduced enough.
