Instructions
- Prepare the Kale:Remove the stalks from the kale. Add ⅓ teaspoon olive oil to the kale and massage until the leaves start to soften and wilt.
- Caramelize the Peaches:Heat a teaspoon of coconut oil in a pan over medium heat. Slice the peach and add it to the pan. Fry for 3-4 minutes until golden. Turnover and cook for another 3 minutes or until golden.
- Shave the Cheese:Use a peeler to shave the smoked Cheddar cheese into thin slices.
- Assemble the Salad:On a plate, arrange the massaged kale and rocket. Top with caramelized peaches and slices of smoked salmon. Sprinkle crushed pistachios and add the shaved smoked Cheddar cheese.
