Instructions
 

  • Preheat the oven
    Preheat the oven to 160°C (320°F). Line a baking tray with parchment paper. I used a round pizza tray, but you can also use a regular baking tray and shape the mixture into a thin round disc.
  • Whisk the egg white
    In a mixing bowl, lightly whisk the egg white.
  • Add the sweet coating
    Add the honey, melted butter or ghee, almond extract, pinch of salt, and vanilla extract if using. Whisk until everything is fully mixed.
  • Fold in the almonds and coconut
    Add the sliced almonds and coconut flakes. Gently fold until all the almonds and coconut are evenly coated in the mixture.
  • Shape the Florentine cookie pizza
    Pour the mixture onto the prepared baking tray. Use a spatula to spread it into a very thin round disc. For the pizza shape, keep the outside edge slightly thicker and spread the middle a little thinner.
  • Bake until golden and crisp
    Bake for 10 minutes, then rotate the tray and bake for another 5 minutes, or until the top is deeply golden and the coconut and almonds are beautifully toasted. Watch closely because coconut toasts faster than almonds and can brown quickly.
  • Cool in the pan
    Leave the Florentine cookie pizza in the pan to cool for 10 to 15 minutes. It will firm up more as it cools.
