Instructions
 

  • Blend the pudding
    Add the roasted pistachios, matcha powder, cottage cheese, dates, rosewater, and a pinch of salt to a blender or food processor.Blend until smooth, soft, and creamy.
  • Transfer to glasses
    Transfer the pudding into serving glasses and smooth the top.
  • Melt the white chocolate
    Melt the sugar-free white chocolate gently, stirring until smooth.
  • Make the pistachio white chocolate mixture
    Mix 1/2 tablespoon of the melted white chocolate with the natural pistachio butter until smooth and creamy.
  • Add the topping
    Drizzle the remaining plain melted white chocolate over each glass.Then drizzle the pistachio–white chocolate mixture on top.
  • Make the swirl (optional)
    Use a toothpick or wooden skewer to gently drag through the drizzle and create a swirl pattern.

  • Preheat oven to 160°C fan / 170°C
  • Spread pistachios on a tray in a single layer.
  • Roast for 5–7 minutes, until lightly fragrant.
  • Cool completely before using.
