What I really love about these bars is the filling. Instead of using fresh blueberries on their own, I use my homemade blueberry sauce, which gives you a richer blueberry layer with berries that stay beautifully whole. The filling is sweet, tangy, glossy, and full of blueberry flavour, while the crumble adds that perfect soft and slightly crisp finish. They’re also much easier to make than they look. You do not need anything complicated here. Just mix, press, layer, crumble, and bake. The filling can also be made ahead, which makes this recipe even easier. I often make my blueberry sauce during the season, keep it in the refrigerator, and use it later in desserts like these bars or simply spread it over bread. Once everything is layered into the pan, the oven does the rest. It’s the kind of recipe that feels impressive, but is actually simple and stress-free.

  • 2 3/4 cups almond flour 264 g
  • 1/4 cup + 1 tbsp coconut flour 35 g
  • 1/4 cup coconut oil 55 g
  • 1/4 cup + 3 tbsp maple syrup or sugar-free maple syrup 140 g
  • 3 tbsp coconut sugar or golden monk fruit 38 g
  • Zest of 1 lemon
  • Pinch of salt 0.5 g
  • Extra for topping ( mixed into the remaining crumble) :
  • 1 tbsp maple syrup
  • 2 tbsp coconut sugar or golden monk fruit 25 g
  • 2 tbsp coconut oil
  • 1/3 lemon zest

Instructions
 

  • Prep the pan and oven
    Line a 22 cm square pan with parchment paper.Preheat the oven to 160°C fan or (175°C ) for a conventional oven.
  • Make the crumble mixture
    Mix the almond flour, coconut flour, coconut sugar (or monk fruit), lemon zest, and salt.Add the coconut oil and maple syrup. Mix until a crumbly dough forms.
  • Bake the base
    Press 2/3 of the mixture firmly into the pan using a spatula or the back of a measuring cup.Use a fork to gently poke a few holes across the base.Bake for 12–15 minutes.
  • Chill the topping
    To the remaining 1/3 mixture, add the extra topping ingredients (maple syrup, coconut sugar or monk fruit, coconut oil, lemon zest). Mix well, then place in the fridge.
  • Add filling and bake
    Spread the blueberry sauce over the baked crust.Sprinkle the chilled crumble topping evenly over the filling.Bake for 20–25 minutes, until lightly golden and bubbling at the edges.
  • Cool and slice
    Cool in the pan for at least 15 minutes, then lift out and transfer to a board.Slice and serve. The bars set more as they cool.
