- Prep the pan and ovenLine a 22 cm square pan with parchment paper.Preheat the oven to 160°C fan or (175°C ) for a conventional oven.
- Make the crumble mixtureMix the almond flour, coconut flour, coconut sugar (or monk fruit), lemon zest, and salt.Add the coconut oil and maple syrup. Mix until a crumbly dough forms.
- Bake the basePress 2/3 of the mixture firmly into the pan using a spatula or the back of a measuring cup.Use a fork to gently poke a few holes across the base.Bake for 12–15 minutes.
- Chill the toppingTo the remaining 1/3 mixture, add the extra topping ingredients (maple syrup, coconut sugar or monk fruit, coconut oil, lemon zest). Mix well, then place in the fridge.
