- Roast the pistachiosSpread the pistachios in an even layer on the baking tray. Roast for 5 to 7 minutes, just until lightly toasted and fragrant. Do not over-roast, as this can darken the colour and change the flavour.
- Rub and remove some of the skinsLet the pistachios cool for a few minutes, then transfer them to a clean kitchen towel. Rub them gently but firmly inside the towel to loosen some of the skins. You can then place the pistachios in a sieve or colander and shake them lightly to help separate and remove the loose skins. This helps create a brighter green pistachio butter. A rough rub is enough, so do not worry if some skins stay on.
