Ingredients
  

  • 150 g sliced almonds about 1 2/3 cups
  • 1 egg white 60 g
  • 72 g golden monk fruit sweetener 1/4 cup + 2 tablespoons
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 40 g unsalted melted butter about 3 tablespoons
  • Pinch of salt
  • Flaky salt for topping, optional

Instructions
 

  • Prepare the oven and tray
    Preheat the oven to 160°C (320°F). Line a baking tray with parchment paper. I used a tray that is approximately 38 x 26 cm (15 x 10 inches).
  • Whisk the egg white and sweetener
    In a mixing bowl, whisk the egg white and golden monk fruit sweetener together until the sweetener is mostly dissolved and the mixture looks well combined.
  • Add the flavorings
    Add the melted butter, vanilla extract, almond extract, and a pinch of salt. Whisk again until everything is fully mixed.
  • Fold in the sliced almonds
    Add the sliced almonds and gently fold until all of the almonds are evenly coated in the mixture.
  • Spread into a thin layer
    Pour the mixture onto the prepared baking tray. Use a spatula to spread it into a very thin, even layer so the cookies bake up crisp and golden.
  • Bake until golden
    Bake for 10 to 12 minutes, then rotate the tray and bake for another 10 to 13 minutes, or until the top is deeply golden and the almonds are beautifully toasted.
  • Add Flaky Salt and Cool
    As soon as the almond crisp slab comes out of the oven, sprinkle over a little flaky salt if you like. Leave it in the pan to cool for about 5 minutes.
  • Cut into Cookies
    While still slightly warm, carefully cut the slab into your desired shape using a pizza cutter or a sharp knife. I cut mine into 18 large cookies. Leave the cookies in the pan until completely cooled, then gently separate them along the cut lines with your fingers.
  • Store and Enjoy
    Once fully cooled, gently transfer the Almond Crisp Cookies to a serving plate or store them in an airtight container to keep them crisp and fresh.
