How to Make This Trifle in a Glass Step by Step
Make the pomegranate jelly
Start by blooming the gelatine in cold water for 5 minutes. Gently warm the pomegranate juice with sweetener until it is hot and just starting to simmer, then whisk in the bloomed gelatine until completely dissolved. Save 1 teaspoon of the jelly mixture for the flummery layer.

Set the jelly on an angle
Place your glasses into bowls or moulds so they are stable, then tilt them to about 45 degrees. Pour in most of the jelly mixture and chill until fully set. This usually takes about 2 hours.

Make the flummery layer and add the berries
Mix the reserved 1 teaspoon jelly with cream and sweetener, whisk until smooth, then let it cool slightly. Once the jelly layer is set, bring the glasses out of the bowls and place them upright. Pour the flummery layer evenly into the glasses and refrigerate until firm. When set, add your fresh berries on top.

Whip the cream and make the white chocolate lace
Whip the cream with sweetener until soft peaks form, then pipe or spoon it over the berries. For the lace topping, melt the sugar-free white chocolate and pipe thin lace circles on baking paper. Chill until set, then place on top of each glass. Crack it gently right before you dig in and enjoy.

Instructions
Step 1: Prepare the Jelly
- In a small bowl, add the cold water or juice, then sprinkle the gelatine powder over the top. Let it sit for 5 minutes to bloom.

- Stir in the bloomed gelatine and whisk until fully dissolved.
- Reserve 1 tsp of the jelly mixture for the flummery layer (Step 3).

- Divide ¾ of the jelly mixture between the glasses.
- Transfer to the fridge and let it set for 2 hours.
Step 3: Make the Flummery
- Take the reserved 1 tsp of jelly mixture and add the cream and 1 Tbsp sweetener. Taste it, and if you like it sweeter, add more sweetener. Whisk until combined.
