  • 2 ripe bananas 220 g
  • ¼ cup + 1 teaspoon coconut sugar 60 g
  • 3 teaspoons tahini 45 g
  • 1 teaspoon vanilla extract
  • ½ teaspoon cinnamon 1 g
  • Pinch of salt
  • cups gluten free rolled oats 112 g
  • ½ cup + 2 teaspoons almond meal or flour 70 g
  • 1 cup chopped walnuts 100 g
  • ¼ cup sugar free chocolate chips 40 g or more if you like
  • 1 teaspoon baking powder

Instructions
 

  • Preheat the Oven
    Preheat your oven to 160°C (fan forced) or 180°C (conventional). Line a baking tray with parchment paper.
  • Mix Wet Ingredients
    Mash bananas until smooth. Stir in coconut sugar, tahini, vanilla, cinnamon, salt, and baking powder until combined.
  • Shape Cookies
    Using an ice cream scoop, portion dough into 12 cookies. Place on the tray and flatten slightly with your palm or spatula.
  • Bake
    Bake for 15 minutes, rotate tray, then bake 5–10 minutes more until golden.
  • Cool and Serve
    Let cookies cool for 3–4 minutes on the tray, then transfer to a wire rack. Enjoy warm or store for later.
